The Kvevri wine making process

8,000 Years of Tradition. The wisdom behind Georgianfermentation

The first fermentation of wine by humans was performed hidden beneath the Caucasus Mountains in Kakheti, Georgia. The wisdom of fermentation has been passed down for over 8,000 years.

Fermenting Qvevri with the energy of the land

Georgia's Qvevri winemaking method was recognized as a UNESCO Intangible Cultural Heritage of Humanity in 2013.
Qvevri wines do not use any artificial preservatives. The wine is made solely from the natural yeast that lives on the grapes.
Kvevri, Georgia's native earthenware jars, are buried in the ground until fermentation is complete.

Whole Body Fermentation Techniques

35 years of aging harnesses the full power of fermentation. The skin, seeds, and even the stems of the grapes are fermented to increase the content of active ingredients.

This traditional Georgian fermentation method helps to restore moisture and elasticity to the skin.
